Udon Noodle & Shrimp Salad

Ingredients
- 1 pkg. KA-ME® Udon Japanese Thick Noodles
- 12 oz. shredded coleslaw mix
- 2 scallions, thinly sliced
- 1 cup cilantro leaves, chopped
- 3/4 lb. cooked medium shrimp
- 1/4 cup KA–ME® Teriyaki Glaze
- 2 tbsp. finely grated fresh ginger
- 1/2 tsp. KA–ME® Sweet Chili Sauce
- 6 tbsp. KA–ME® Stir-Fry Oil
- Pinch of salt
- Lime wedgesfor garnish
Instructions
- Transfer drained Udon Noodles to bowl; add coleslaw mix, scallions, cilantro and shrimp.
- In a blender, add Teriyaki Glaze, ginger, Sweet Chili Sauce; puree until smooth. Slowly add Stir-Fry Oil and blend until emulsified. Add salt.
- Pour over prepared noodles and toss.
- Garnish with lime wedges and serve.
